Blueberry Muffins in the Morning


One of the best parts of our backyard are the wonderful blueberry bushes that previous owners planted. We have three established bushes and a couple of new plants because we lost a couple last year. Generally speaking, the blueberries from our bushes are for a quick snack because the boys pick them as soon as they are ready. We'll look out the kitchen window and see The Librarian crouching in front of one, just snacking away.


It works though because a friend of ours has rows and rows of blueberries. So far this year, we already picked about 30 pounds. She's still got some of the late blueberries to pick so we may yet go back. We need enough for pancakes, muffins, blueberry pound cake and smoothies during the winter months.


Earlier this week, I discovered that those munchers had missed enough to make fresh blueberry muffins. So Fearless Flyer and I headed out in the early morning while the other two slept and picked a cup and a half of berries. It was so hard not to just pour a little cream over the top and dig in, but we contained ourselves.


We brought the blues in, washed them off, snuck one each and then started measuring, pouring and mixing. One of my new favorite cookbooks is Simply In Season and it has a great recipe for blueberry muffins:
Berry Muffins
Simply In Season

1 1/2 Cups Whole Wheat Flour
1 Cup Rolled Oats
1 Tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon (optional)
Combine in a bowl.

1 Egg
1 Cup Milk
1/4 Cup Oil
1/4 Cup Honey
In another bowl combine and mix well. Add wet ingredients to the dry ingredients and stir until just moistened.

1 1/2 Cups Berries
Fold in berries. Fill well greased muffin tins 2/3 full. Sprinkle top with cinnamon sugar. Bake in preheated oven at 400F for 15 - 20 minutes.
